This idea is a theme Theodor has long ascribed to. Throughout his distinguished career, his menus have always reflected time-honoured techniques such as brine, fermentation, and specialised drying, as well as an innate passion for the natural, local, and seasonal.

Our signature touch

Every dish during your stay is crafted to impress, with signature dishes at the Amavi Hotel worth savouring. On the Immenso menu, the Kushiyaki skewers, vegetables, meat, or fish grilled over Robata charcoal with Ghifa chipotelle and Teriyaki glaze, ginger and soy salt, are a must-try. The slow-cooked braised beef ribs are another firm favourite. Inspired by Chef Falser’s travels, the menu blends Japanese and Peruvian influences into exquisite Nikkei cuisine.

The Nocturne tasting menu is equally captivating. From Ora King salmon tartar parmesan pancake to Plin ravioli filled with braised duck ricotta and parmesan stuffing, the experience is mouthwatering. For plant-based indulgence, the vegan menu delights with Beetroot Carnaroli risotto enhanced by black olive powder and fresh herbs. Be sure to also try the baked oysters with Pioppini mushrooms served with mushroom cream and tea.
