The Kanika couples resort Culinary Team had commissioned the world renowned and multi award-winning Italian Michelin-starred consultant chef, Theodor Falser, before the opening of the couples resort Amavi, to design the concept and menus for two of its restaurants – the Nocturne and the Immenso. After a two-year collaboration, the Chef, has returned to work with the Kanika Culinary Team, on the recent re-opening of the Tripadvisor 2021 Travelers Choice Awarded Amavi, re-inventing the dining experience at both the Nocturne and Immenso restaurants, with new menus boasting intricately crafted creations.
“After two years of successful operation, we believe it’s time to bring the Amavi culinary experience to the next level,” explains Falser. So, what exactly can guests look forward to?

All about breezy intimate evening meals MadeForTwo in al fresco style under starlit skies, immerse yourselves in an inspiring rooftop setting with panoramic views across the horizon at this ultimate summer destination renowned for offering the best sunset spectacle in town. The Immenso menu is one where modern fusion cuisine takes centre stage in combination with Nikkei cuisine, inspired by Falser’s travels around Asia and Latin America. Sparked by his desire to share the growing appreciation of Nikkei cuisine, guests can anticipate the most flavoursome surprises. “Nikkei cuisine is an eclectic cuisine inspired by Asian techniques with South American ingredients – very flavourful, very spicy and colourful,” enthuses Falser. “One of our best touches at Immenso, is our custom-built Robata grill where we cook all our seafood and all our meats on charcoal.” To satisfy the sweet tooth, diners can also indulge in flavourful Asian desserts, made with European techniques and South American flavours.

The restaurant of choice for those who love Mediterranean cuisine with a creative twist, Nocturne offers a unique fine-dining culinary experience. The six-course tasting menu, developed by – Michelin Starred – Falser, takes you on an extended culinary journey that will satisfy a connoisseur’s palate, one dish at a time. And from the moment you enter the restaurant, you’ll be educated on the ingredients that feature in every course. “We introduced a really new menu with prime local ingredients, table side touches– that is the real fine dining,” says Falser. The elegant and calming décor, the intimate ambience, and the gentle sound of the piano melodies provided by our pianist create the perfect setting for an ultra-romantic dining evening.
To guarantee that our guests enjoy the best possible taste experience during their stay, both Immenso and Nocturne have been included in Amavi’s Half-Board Premium culinary concept, developed by our Kanika Hotels Culinary Team in close cooperation with Falser. The diverse offering of Half-Board Premium also features dining experiences in two additional signature restaurants – Fortolana, giving diners an exquisite taste of Cypriot fare in a secluded Mediterranean-style outdoor terrace restaurant, and all-day restaurant, Ezaria, which features live open cooking stations and ten themed nights taking couples on a journey around the world.
